Unlimited clients are limited

I understand that there are to be unlimited amount of clients, but if I try to have more than 1 client open, it won't work. Does the unlimited client mean I can load the client to many computers, but only run one at a time?

Yes, that means unlimited clients, buts only one on each computer.

If I understand this correctly then, lets say I have server running on 1 PC, and client loaded on 5 different Mac's, I should be able to have all 5 Mac's using client at the same time?

YES – but only if you have XF 3.0 – older versions (2.5/2.6) indeed need separate licenses for each client.
